"THE POP UP" AT EL CHAVO
A 6-month restaurant pop-up based at an Eastside LA landmark. A collaboration with talent that included Phillip Frankland Lee, Cocktail Academy paired classic and modern cocktails through an agave-focused program that put new twists on Mexican classics. With an ever-changing menu, buoyed by a curated selection of tequila and mezcal, guests could engage in interactive tastings on a nightly basis.
Los Angeles’ current regning “pasta champ” Evan Funke helms this Venice, CA staple, named “Best Restaurant in America” by Esquire in 2017. Cocktail Academy worked hand-in-hand to create cocktails that complemented the fare. Showcasing emerging distillers that shared a similar ethos, mission and passion, we intimately created spirit offerings that seamlessly connect the culinary experience all while managing a small, efficient bar space.
SUNDRY AND VICE
This Cincinnati-based restaurant and bar sought to disrupt the market with an apothecary themed bar, complete with house-made tinctures, tonics, elixirs and bitters. Cocktail Academy implemented four phases to their bar program, with the first three covering pre-opening and conceptualization, OS&E, menu development and staffing. The final phase consisted of on-site training, monitoring and a three-month follow up which ultimately resulted in the premier cocktail program in a newly resurgent market.
A Vietnamese Izakaya from Chef Sean Pham, Cocktail Academy focused on a classic cocktail program with Asian notes to complement the chef-driven food. Meticulously crafted cocktails that had to meet Michelin-starred team standards provided a rigorous structure in which the cocktail program flourished. With a delay during the licensing process we developed a successful low ABV spirit program that was on of the first in the LA market. Utilizing fortified wines and fresh asian produce we were able to make time fly until the full alcohol permit was in place.
WOLFGANG PUCK CATERING
As LA’s most prolific catering company, known for culinary excellence. Has set their sights on having their beverage program meet them at the top of the event industry. Cocktail Academy works side-by-side with them to develop new excellent and relevant bar programs for their high-profile clientele that often includes A-list celebrities, movie premieres and The Academy Awards.
LA’s hospitality juggernaut, SBE, opened this two-story concept that serves brunch, dinner and embellished by a busy nightlife presence. Cocktail Academy envisioned the bar as a tribute to Old Hollywood with a modern feminine flavor palate. A menu of upscale street food, the resulting cocktail program is approachable, eclectic and satiating, resoundly connecting back to the Golden Era of Tinseltown.
